We use every part of the fruit

Crushing is one of the first processing steps that the washed, fully ripened fruit undergoes. Here the fruit is mashed, and in the case of cherries, apricots, peaches and plums, the stones are removed.

 

While the fruit itself is sent on its way to the fermentation tanks, a different fate awaits the stones. They are dried in the sun for several weeks before being used to produce energy in our woodchip heating system.

 

The waste products from distillation are used as a natural fertilizer in our fields and orchards.
